Brownie bites

This is a three ingredient snack that packs double chocolate goodness and is super simple to make. You even can add an extra optional fourth ingredient to make it triple chocolate, if you are feeling extra brave. You’ll need one box of brownie mix, 3/4 cup butter, 1 cup mini chocolate chips and, if you like, a box of chocolate pudding mix, dry. Microwave the butter until is mostly melted and combine it with the brownie mix in a large bowl. Mix well and knead with your hands until it has an even consistency. It will be very thick. Add in the chocolate chips and stir to mix well. Roll into small balls and if you want, roll the chocolate balls on the dry pudding mix. Done! Delicious, easy and quick. You can keep these for up to one week in the fridge.

Coconut chocolate mousse

Every child loves chocolate. Not every child loves coconut. But some do, and the coconut lovers are passionate about it. If you combine chocolate with coconut, you’ll be their hero. You’ll need one can of coconut milk, 5 tbsp cocoa powder and 2 tbsp powdered sugar. Pour the coconut milk in a bowl and leave in the fridge overnight, uncovered, so it thickens up a little. Then, add the cocoa powder and the powdered sugar and pour the mixture into a large metal bowl. Whip at the highest speed with a mixer for a couple of minutes until it gets fluffy. Try not to eat it out of the bowl. For presentation you can pipe the mousse into small glasses and add sprinkles.

Mini Nutella cheesecake

What if I told you you can have delicious Nutella mini cheesecakes in only 30 minutes? Yup, you can. You’ll need 10 oz graham crackers, 5 tbsp unsalted butter, 13 oz Nutella (at room temperature), 3/4 cup chopped hazelnuts, 1 lb cream cheese (at room temperature), 1/2 cup powdered sugar and whipped cream to top. Break the crackers into the bowl of a processor, add the butter and one tbsp of Nutella and pulse until it starts to clump. Add 3 tablespoons of hazelnuts and continue pulsing until the mixture resembles damp sand. Grease a cupcake pan and scoop a bit of the mixture into every compartment. Press down with your fingers so it’s compact and place in the fridge. Now beat the cream cheese with the powdered sugar until smooth and add the rest of the ¬†Nutella to the mix. Continue beating until it has a uniform consistency. Take the pan out of the fridge and smooth the Nutella mix over each base. Place in the fridge overnight and serve! Top with the whipped cream and the remaining hazelnuts.
